Peru Jean Colosay

From: 9,75

The Fernandez family in Peru has different small farms for most of their extended family members, this particular coffee is from Yonal. Grown on the luscious highlands in Peru where the climate and terroir creates wonderful lots. With his relative small farm he’s managed to create big flavors. With bright florals, richened through flavors of biting into mature peach and red berries on a juicy base.

A note from our supplier, Nordic Approach:

This coffee is from a farmer in the Fernandez gang in Colasay. We have started to buy good amounts from them and the area in general. We find the flavours of the coffees here pretty different and characteristic, and there are tons of potential. Yonal Fernandez farm El Barejon has 3 hectares of coffee and is located in Vencedor, a village in Colasay district in Jaen province. He’s at an altitude of 1750+ masl. It’s a medium farm by Peruvian standards. The variety is a local Bourbon, which is common in this area as a single variety. It’s a family operation, but they have pickers helping them in the season. But yield per tree is generally low. The farm has a small beneficio where Yeiner processes the coffee.

The coffee is pulped and fermented for about 24 hours in bags or a small tank before being washed and rinsed, and then sun-dried next to his house. Drying takes about 10-20 days. Colasay is an area that we find really interesting for its profiles and potential. The coffee flavours here can be amazing. Plus, there are many farmers who can produce higher qualities over time, especially with some support on farm management and post-harvest processing. This is the starting point for more investment there, and these coffees are selected based on the cup score and the farmers ability to deliver micro lots.

Our coffee comes in craft paper bags which contain a plastic liner on the inside to guarantee freshness of our coffee. Please dispose properly at your local plastic trash container. The Village Coffee is roasted fresh every week, and best consumed within four weeks after roast date. Store your coffee in a dry, dark and cool place, avoid the fridge.
