Colombia Santa Maria Las Perlitas

16,40

This year we chose to offer two coffees for our December special. Two very distinctive and different lots, yet both from the same rare variety: Pink Bourbon. This relatively new variety was rediscovered a couple years ago and brings very fruit forward and floral flavors to the table. One was processed as a super clean washed, the other is anaerobically fermented as a funky natural.

Here we have the Las Perlitas, aka Little Pearls, a washed lot from around Santa Maria. It’s a selection of small lots of cherries that would not have enough volume on their own to be exported, which would be a shame since they are all snapshots of their own unique terroir. All of them are Pink Bourbons that are processed to the highest standards, bringing forward the uniquely clean and floral taste of the Pink Bourbon variety. We found fresh blueberry and hibiscus with a tang of grapefruit and a sweet honey aftertaste. Enjoy discovering the layers of delight in this cup.

A note from our supplier, The Coffee Quest:

In Spanish, Las Perlitas means “Little Pearls,” and throughout the harvest, it’s quite common for smallholders in Colombia to produce lots that aren’t large enough to be exported on their own. However, the quality is often just as good (or even better) than that of larger lots. As such, we purchase all coffees scoring 86+ points, regardless of size, and create a larger, export-size lot based on cup score and profile.

The result is Las Perlitas Pink Bourbon, a celebrated Washed coffee composed of small Pink Bourbon lots from producers in Huila. Behind this lot are dedicated farmers like Deiro Gasca, Lizardo Imbachi, Erik Bravo, and Delfin Carvajal, whose farms, situated at elevations of 1,900 to 2,300 meters.

Pink Bourbon is renowned for its vibrant acidity, fruity sweetness, and delicate floral notes, making it a standout in every cup.

Our selection process is extremely rigorous. Every small lot is cupped multiple times before being included in the final blend. In addition to ensuring cup quality, each coffee must meet strict physical criteria, including moisture content and water activity, in line with our stringent guidelines.

Our coffee comes in craft paper bags which contain a plastic liner on the inside to guarantee freshness of our coffee. Please dispose properly at your local plastic trash container. The Village Coffee is roasted fresh every week, and best consumed within four weeks after roast date. Store your coffee in a dry, dark and cool place, avoid the fridge.
