This year we chose to offer two coffees for our December special. Two very distinctive and different lots, yet both from the same rare variety: Pink Bourbon. This relatively new variety was rediscovered a couple years ago and brings very fruit forward and floral flavors to the table. One was processed as a super clean washed, the other is anaerobically fermented as a funky natural.

It might seem like excessive, to take such a special variety as a Pink Bourbon and give it an involved processing like an anaerobic natural. But this is one of those instances where one and one make three. The expert processing of Andrés pushes the potential of an already great coffee to new levels. The strong harmony of both fruit and processing push forward boozy and strong flavors of strawberries dipped in rich white chocolate, but with an elegant layer of warm yet bright eucalyptus and citrus on top. There’s a lot to unpack so take your time and indulge.

 Andres Guaca is a third-generation coffee producer in the Acevedo region of Huila, Colombia. For the past five years, he has focused on producing coffee for the specialty market by enhancing post-harvest practices through controlled experimental fermentation methods. He hopes these developments will keep on delivering premiums for his coffees. Over the past five years, he has introduced more exotic varietals like Caturra, Pink Bourbon, Pacamara, and Geisha. Andres’ eldest son has already developed a passion for coffee production, with the aim of becoming an agronomist to carry on the farm’s legacy and growth.

Our coffee is meticulously sourced through direct trade, eliminating intermediaries. This fosters transparent and equitable distribution of earnings, reflecting our commitment to traceability and fairness. Each of our coffees originates from single estate micro-lots, carefully selected and processed to maintain their distinct flavor profiles. This specific coffee has been sourced through Plurilateral Solutions our local sourcing partner in Colombia. 


Our coffee comes in craft paper bags which contain a plastic liner on the inside to guarantee freshness of our coffee. Please dispose properly at your local plastic trash container. The Village Coffee is roasted fresh every week, and best consumed within four weeks after roast date. Store your coffee in a dry, dark and cool place, avoid the fridge.
