For Yovani Hernandez, happiness is a job well done. He applies this belief to his coffee and uses meticulous cultivation and processing techniques to produce high quality lots like this Pink Bourbon FW. Yovani Hernandez has been cultivating coffee for more than 25 years. He inherited his father’s farm and, through successful, quality-focused cultivation, purchase 3 additional farms. He now cultivates 12 hectares total. This Pink Bourbon lot comes from Finca La Esperanza, a 4-hectare plot.
Yovani has been cultivating specialty coffee since 2009. The higher prices for specialty coffee have enabled him to improve his family’s quality of life. His dream is to sell his coffee directly to clients at a fixed price. This would give him security and fairly compensate him for his hard work. In addition to the Pink Bourbon in this lot, Yovani also cultivates Caturra, Castillo, Geisha and Colombia varieties.
Yovani selectively handpicks ripe, red cherry and pulps them. Coffee is fermented in tanks and then washed in clean water. Yovani lays parchment to sundry and rakes parchment frequently to ensure even drying. Colombia has been producing and exporting coffee renowned for their full body, bright acidity and rich aftertaste, since the early 19th century. Colombia boasts a wide range of climates and geographic conditions that, in turn, produce their own unique flavors in coffee. This also means that harvest times can vary quite a bit. In fact, between all its different regions, Colombia produces fresh crop nearly all year round.
The increasing focus on the specialty industry is changing the way traders and farmers do business. It is becoming more common for farmers to isolate the highest quality beans in their lots to market separately. These higher quality lots are often sold under specific brands or stories.
Our coffee comes in craft paper bags which contain a plastic liner on the inside to guarantee freshness of our coffee. Please dispose properly at your local plastic trash container. The Village Coffee is roasted fresh every week, and best consumed within four weeks after roast date. Store your coffee in a dry, dark and cool place, avoid the fridge.
