A note from our supplier, Nordic Approach:
Don Giraldo Muñoz has lived on the Agua Tibia farm for more than 25 years, he grows coffee by family inheritance since his parents and grandparents were also dedicated to this beautiful activity always. For him, this is his only way of life since it is his job, his daily sustenance, his distraction and the fruit of all his effort.
Don Giraldo Muñoz lives with his wife and children, they are in charge of all the activities related to coffee. However, at harvest time he hires workers from the community to help him with this work. The Agua Tibia farm is located in Palacinoy, a mountainous area with great biodiversity and unique fauna, giving the coffee a unique taste and complexity. Giraldo started producing specialty coffee 8 years ago now, which meant a brand new shift in his life as it improved the family’s income. While the fermentation process improved significantly the quality of the beans, Gerardo also faces the challenge of drying his coffee at the height where his farm is located and the temperature.
The soil and climate conditions of Nariño contribute to a combination of dried fruits and citric flavors, high in acidity, and with a velvety body. In addition, the traditional knowledge of indigenous origin, which is still a cultural component of the coffee growing methods of this community, provides the cup with a mystical and ancestral feature that leads to an extraordinary sensory experience.
